Sometimes when you are baking, you need substitutes:

Baking Substitutes

The water may be good in this beautiful desert, but it sure is hard. Therefore, it is important to decalcify (descale) the espresso maker/coffee machine, etc. on a regular basis—every 2 to 3 months is usually good. Actually, every two is preferable. The method used:

- 50/50 mix of water/distilled white vinegar. (2 cups/2 cups, if you have the capacity.) You can also purchase special cleaners, but vinegar works really well.
- If it is a drip coffee maker, run all of it through. If it is an espresso machine, run half through the espresso maker and half through the steam wand.
- Rinse by running water through the machine using the same amount and process used to clean. (4 cups.)
- Then, rinse again.

Also, some use distilled water to avoid the build-up of minerals in their machines. A good water filter works well, if you are not interested in using distilled water.



Speaking of vinegar as a cleander, here are other uses.

Sometimes you just want to look for properties from home, without having to talk with an agent. Palm Desert, Palm Springs, La Quinta, Indio, Bermuda Dunes, Thousand Palms, Rancho Mirage, Indian Wells, Cathedral City, Coachella, it makes no difference, as we want to search in the comfort of our home's air conditioning. This means you have to access the MLS (Multiple Listing Service), and we found a way to access the MLS for the desert area, free.

We can't just comment on the bad, we have to find the good out there also (there is more good than bad).

Nothing but praise from a more than satisfied customer, who has taken his vehicles all over the desert trying to find good service at a fair price, for G & C Smog and Auto Repair.

There are so many places to have your vehicle repaired, but how many are good?

Went to Trans Medic Transmission (Trans-medic? Transmedic?) in Cathedral City (68750 Ramon Road) and was not happy with their work or their customer service. They broke a part that was not broken when the car was brought in! The car works, it just sounds like there are rocks in the tranny. The owner has never returned a phone call and he doesn't know what I am calling about, or did he know...

Whatever it is, there are too many other shops out there. I will not be forking over anymore cash to these guys. For transmission work in the future, I will try...

Yeah, I know, the site can be neglected, but you don't want to look a gift-horse in the mouth -- it's for you to enjoy and do whatever you want. And, as long as it stays up and features are added, it's all good... enjoy!

Congratulations are in order for A. J. Scott (189) of Palm Springs High and David Razo (145) of La Quinta High, as both qualified for the CIF wrestling tournament in Bakersfield. It is the first state participant for La Quinta.

Neither placed, but making it to the tournament is a great feat. A. J. was unfortunate enough to be matched with one of the best wrestlers in the nation in his first match, Jake Varner, who is undefeated and has pinned every opponent this year, but after that loss he managed a couple victories of his own.

Wrestlers are now getting ready for next year, and all are welcome—any age any school—to attend the PAL Wrestling Monday and Wednesdays from 6 to 8.

Did you check out the fair, really see it all? Then you saw the Lamb and Lass Fashion Show, or was that the Lass and Lamb Fashion Show? Either way, it was really kinda cute.

Not just because it has locations all over the desert, and has that "local feel," but because for some like thee Blockbuster has that sleazy feel - a "we will get your money" one way or another feel.

Yeah, that's right, bad experiences at Blockbuster, but we have Video Depot!

Will we remember all of the cold and rain in a few months?

Only a little more than a week away, the annual Riverside County Fair, or as we know it, The Date Festival.

Remember, if you buy your wristbands for the rides before the fair, you will save about 25%. Ask around, it seems as if everyone is selling them.

For those interested, the DVL league championship will be determined tonight when La Quinta visits Palm Desert. Both teams are undefeated in league. (JV starts at 6, while varsity starts at 7.)

On paper, it looks like a La Quinta win, but as with any contest, you have to step up and win to get your points.

We all love to eat, as the success of the desert’s eateries attest to, but there are a lot of places frequented by locals and not giant chains that people do not know about and should.

We’re looking, and if you have any suggestions, that is what the comments field exists.

Need to take a day trip out of the desert? How about some Chicken 'n Waffles?

Roscoe's House of Chicken 'n Waffles have locations in Hollywood, Los Angeles, Long Beach and Pasadena. Pasadena is the closest. It sounds a bit strange, Chicken 'n Waffles, but it is good eats. Real good.

Not sure what is in the waffles that makes them taste so good, perhaps cinnamon or nutmeg or...

The big earthquake predicted did not happen. That is a good thing, but it is coming.

The appointment time came and went, but after a couple of calls, he arrived - 2 hours late. The price that included installation did not include all of the parts necessary for installation and warranty(?), so tack on another $15. Still, Low Prices Auto Glass in Cat City (328-3757) was the least expensive. The people on the phone were friendly and helpful.

Used before, and will again, the best bang for the buck - great price and great service - is Palm Springs Auto Glass 'N Tint (324-5350), also in Cat City.

It does not make a difference where either one of them is located, as they will come to you free of charge.
